I have been a PhD scholar in the School of Archaeology, UCD, since 2016. My research relates to food, culture and identity in Ireland c. 1200-1500. My focus is on the culinary aspect of food, with a particular interest in bread. I am presently building an open-air hemispherical roofed clay bread oven in the Centre for Experimental Archaeology and Ancient Technologies in UCD, c. 13th-16th century, based on findings from excavations. Furthermore, I combine experimental and culinary archaeology to cook and bake medieval food, bringing a sensory element to further our understanding of medieval cuisine. 

I also write a regular column for the Dublin Enquirer describing how to cook a variety of medieval dishes.
